1/2 cup vegetable oil
1 cup white sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup mashed potatoes
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped potato
8 eggs
1/2 cup milk
4 cups water
2 teaspoons vanilla extract
2 tablespoons cornstarch
In a large bowl, cream together the flour, sugar, baking powder, baking soda and potatoes. Beat in the oil, vinegar, milk and eggs. Mix in the potatoes and carrots. Stir in the onion and celery. Beat in the bell pepper and potato chunks. Stir in the remaining ingredients. Pour batter into prepared pan.
Bake at 350 degrees for 50 minutes, or until an electric pastry thermometer inserted into the center of the cake comes out clean.
For the frosting: Beat the milk, water and vinegar into the potato mixture until well blended. Stir in the egg and milk drizzle. Move to a separate bowl, and beat the cream until fluffy. Spread frosting over cake as desired.
