1/2 cup corn syrup
1 cup sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
4 eggs
1 1/2 cups flaked coconut for decoration
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheet.
In a large bowl, cream together the corn syrup, sugar, cinnamon, nutmeg and salt until smooth. Blend in the eggs one at a time, then stir in the 1 cup chopped coconut. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet before removing to a wire rack to cool completely.
