Spinach Cheese - Italian Style Recipe

Ingredients

1 cup shredded Cheddar cheese

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

1 medium yellow bell pepper, thinly sliced

2 slices mozzarella cheese, sliced

1 cube mozzarella cheese, sliced

1 pound shredded Cheddar cheese

2 tablespoons finely chopped onion

1 cup finely chopped celery

4, green onions, sliced

1 3/4 cups milk

1/4 cup finely chopped green pepper

1 tablespoon finely chopped green onions

1 1/2 cups shredded mozzarella cheese

Directions

Slice 1/2 onion slice into 1/2-inch slices. Place slice in a large pot. Cover and simmer over medium heat, stirring occasionally, until lightly browned, about 20 minutes. Drain broth, reserving 1/2 cup as the sauce.

Meanwhile, saute 1/3 cup shredded Cheddar cheese in 1/2 cup olive oil; drain. Stir in onions, bell pepper, mozzarella cheese, and celery. Saute 5 minutes or until cheese is melted.

To serve, place sliced cheese slices in a small saucepan. Remove slices, discard cheese, and sprinkle with remaining cheese. Serve immediately.
