1 cup all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup butter, softened
1/4 cup packed light brown sugar
2 eggs
3 cups crushed cornflakes cereal
1 1/2 cups packed light brown sugar
3 cups pumpkin puree
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 cup melted butter
Preheat oven to 350 degrees F (175 degrees C).
Stir flour, baking powder, baking soda and salt into a large bowl. Mix together melted butter, brown sugar, eggs and cornflakes cereal. Pour mixture into 2 small baking pans. Sprinkle with pumpkin puree. Fill cookies with crushed cornflakes cereal. Place within 1 inch of foil. Place on ungreased cookie sheet.
Bake 12 to 16 minutes or until lightly browned. Remove from cookie sheet to wire rack. Cool completely.
