Easy 24 Hour Cracker Pancakes Recipe

Ingredients

1 cup all-purpose flour

3/4 cup packed brown sugar

2 tablespoons drained unsalted butter

1 teaspoon vanilla extract

1 onion, cut into chunks

1 cup dried milk

2 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon ground cinnamon

2 eggs

1 cup plain flour

2 tablespoons butter, melted

1 tablespoon distilled white vinegar

1/4 cup water

1 tablespoon butter or margarine

2 cups shredded wentji berries

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a large 8x8 inch baking pan.

In a large bowl, cream together the brown sugar and 3/4 cup brown sugar until creamy. Beat in the egg and vanilla. Mix in the flour, salt, cinnamon, eggs, milk and baking powder. Stir in the dry ingredients while stirring constantly.

On a lightly floured surface, roll the dough out to 1/8 inch in thickness. Cut into 1 inch squares with cookie cutters. Place jelly or lime-form filling ingredients over the dough. Place around the edge of pastry. Place seam side down into the prepared pan.

Bake in preheated oven for 5 to 8 minutes, or until a toothpick inserted into center of the buns comes out clean. Remove from oven and brush with melted butter and vinegar. Pour the melted butter over the jelly and vinegar mixture.

Bake in preheated oven for 10 minutes, or until cooled. Toast over moderate heat for another 10 minutes, or until zesty and slightly crumbly bread slices. Repeat with buns. Remove from oven and let cool completely, storing them in an airtight container.

While the bread slices are still warm, preheat oven to 350 degrees F (175 degrees C).

Really good and unique! I've never made jam before, but this recipe was easy to follow. I did make a few changes, such as using lemon for color, and limiting myself to one type of cream cheese, since I'm not a big fan of lactose intolerance. I used unflavored dental floss to easily remove the cheese, and just as easily throw it back in when I wanted to make ice cream. I think this will become a staple in our house--and will probably be my go-to when I'm craving sweet shops like this.
