1/2 cup white sugar
2 tablespoons lemon zest
1 egg, beaten
2 tablespoons milk
2 tablespoons lemon-lime flavored extract
2 teaspoons West Indian cooking curry blend
6 slices turkey dinner roll
1 (8 ounce) can crushed pineapple with juice
1 cup sliced almonds
3 tablespoons confectioners' sugar for dusting
In a large shallow bowl, blend sugar, lemon zest and egg until smooth. Place in the bowl; add milk and lemon-lime extract, then thoroughly mix. Fold gently in the coconut, pineapple, almonds and confectioners' sugar.
Line a 11x17 inch pan with parchment paper and place pan on waxed paper.
Bake 45 minutes in the preheated oven, uncovered, at 450 degrees F (220 degrees C), then reduce the temperature to 350 degrees F (175 degrees C) and continue baking for 20 minutes, until loaf springs back when lightly touched. Let cool in semi-prepared pan for 5 minutes, then cool completely.
