1/2 cup margarine
1/2 cup white sugar
2 teaspoons vanilla extract
2 eggs
1 teaspoon anise extract
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 1/2 cups semisweet chocolate chips
1 teaspoon vanilla extract
4 cups flaked coconut
Preheat the oven to 375 degrees F (190 degrees C). Spread the margarine into an 8x8 inch baking dish and sprinkle the sugar on top. Sprinkle the vanilla extract on top of the margarine. Spread the eggs over the sugar mixture.
In a separate small bowl, mix the flour, baking powder, baking soda and cinnamon; stir into the margarine mixture. Spread evenly over the cookie sheet. Place the chocolate chips over the crust. Spread the coconut over the cookies.
Bake for 15 to 18 minutes in the preheated oven, or until a toothpick inserted into the center of the cookie comes out clean. Cool on the baking sheet for 5 minutes before removing from the cookie sheet to cool completely.
