1/2 cup butter or margarine, softened
1 1/2 cups all-purpose flour
1 cup white sugar
2 eggs, beaten
1 teaspoon vanilla extract
2 tablespoons cherry preserves
6 pancakes per serving, warmed
Preheat oven to 350 degrees F (175 degrees C). Grease a large baking sheet.
In a large bowl, cream together the butter, sugar, eggs, vanilla, and cherries. Stir through the flour mixture until just smooth. Pour batter into prepared pan.
Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of a pan comes out clean. Cool 30 minutes, then flip and continue to cool at room temperature. Cool completely.
