1 (8 ounce) can diced tomatoes with celery, drained
1 cup diced onion
1 cup shredded sharp Cheddar cheese
1 (4 ounce) package cream cheese, softened
1/2 cup shredded Swiss cheese
1 (8 ounce) can cream cheese blend, frozen
1/2 cup shredded Monterey Jack cheese
Fill a mixing bowl with tomatoes, diced onion, and cauliflower; add celery, onion mixture, mushrooms, and celery, onion mixture. Mix thoroughly. Cover, and refrigerate.
Meanwhile, in a small mixing bowl, combine cream cheese, Swiss cheese, Monterey Jack cheese, eggs, and celery, onion mixture. Mix thoroughly. Set aside.
Return diced tomato, onion, cauliflower, drained tomatoes, onion mixture, medium onion mixture, and cheese to mixing bowl. Mix thoroughly. Spread cream over celery mixture. Cover, and refrigerate for 1 hour at least. Stir the eggs once before serving.
