1 cup margarine
1 cup boiling water
1 cup packed light brown sugar
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
1 teaspoon lemon extract
1 1/2 cups vegetable oil
1 (8 ounce) can crushed pineapple with juice
1 cup butter or margarine, melted
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9- x 8-inch pans.
In a large bowl, cream together margarine and boiling water. Mix in brown sugar, 1 cup white sugar, 1 teaspoon vanilla. Beat in eggs, 1 teaspoon lemon extract, oil, and pineapple.
Pour batter into prepared pan. Butter edge of pan.
Bake in preheated oven for 35 minutes, or until a toothpick inserted into center of the cake comes out clean. Cool cake completely on wire rack. Turn out on wire rack and cool completely.
