Popcorn Pudding II Recipe

Ingredients

3/4 cup corn syrup

1/2 cup brown sugar

1/2 cup soy milk

3 tablespoons vegetable oil

1 teaspoon vanilla extract

1 (2 ounce) package instant coffee pudding mix

1 (16 ounce) can popcorn, drained

Directions

In a large saucepan, combine corn syrup, brown sugar, soy milk and oil. Bring to a boil, stirring constantly. Boil, stirring frequently, until mixture reaches desired consistency. Mix in vanilla and pudding mix.

Pour mixture into 2 3/4 quart casserole dishes. Bake at 375 degrees F (190 degrees C) for 5 to 10 minutes in the preheated oven. Allow to cool completely.

Beautiful and nice recipes. I used some corn starch to thicken it up at the end. I also substituted lite sour cream for the cream cheese. It was still pretty thin, so maybe next time I'll add another can of mushroom soup. Will be making this again.--Very helpful chef! thanks for the recipe
