16 large pineapple, sliced into 1/4 inch rounds
1/2 cup grape juice
1/8 teaspoon white sugar, divided
1 teaspoon lemon juice
1 (8 ounce) can sliced kalamata olives or Italian-style salad dressing
Place pineapple and grape juice in a blender or food processor bowl and blend until smooth. Stir in sugar 1 tablespoon at a time until desired consistency is achieved. Chill pineapple for several hours before serving.
In a small saucepan over high heat, combine lemon juice and lemon slices. Bring mixture to a rolling boil and boil 5 minutes. Stir in white sugar. Reduce heat to medium and allow mixture to cool slightly. Stir in grape juice, lemon slice, olives and salad dressing. Serve with pineapple.
