1/2 teaspoon cayenne pepper, or to taste
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground black pepper
6 quart tablespoons olive oil
1 tablespoon minced shallots
1/2 teaspoon Cajun seasoning
1 tablespoon Italian seasoned seasoning
1 tablespoon rice vinegar
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/8 teaspoon cider vinegar
In a large bowl, blend the cayenne pepper, garlic powder, paprika, salt, ground black pepper, olive oil, shallots, Cajun seasoning, Italian seasoning, rice vinegar and salt. Mix thoroughly.
Heat a large skillet over medium heat. Pour the mixture into a small shallow dish, and place a piece of toothpicks on top.
Place the toothpicks onto the meat, and leave seam-side up. Brush with white vinegar. Sprinkle with chopped shallots.
Place the meat in the shallow dish. Brush with white vinegar again, and place on top of the remaining marinade.
Arrange the toothpicks on top of the cooked meat. Sprinkle grated marinade over the meat. Cover, and refrigerate overnight.
