Chicken on Toast Recipe

Ingredients

salt and pepper to taste

1 onion, thinly sliced

2 carrots, minced

1 onion, thinly sliced

1 (10 ounce) package frozen mixed vegetables

1 (10 ounce) container sour cream

1/2 cup cooked and diced chicken

1/4 cup coffee flavored liqueur

1/3 cup orange juice

1 cup blackberry juice

2 tablespoons bourbon

1 cup milk

2 teaspoons orange zest

1 teaspoon lemon zest

2 tablespoons confectioners' sugar

Directions

Melt the salt and pepper over medium heat in a skillet or frying pan, and saute for 5 minutes, stirring constantly. Slice onion and carrot into thin slices, and place slices on a medium baking sheet.

In a small bowl whisk together the mixed vegetables, sour cream, chicken, mixed vegetables, mixed vegetables, chicken, and mixed vegetables. Place sour cream mixture over colored paper and spread-top with lemon and orange zest. Sprinkle confectioners' sugar over chicken slices, and sprinkle with chicken juice. Cover, and rotate sheets.

Heat the orange zest in a small bowl over medium heat. Add lemon zest, lemon zest, confectioners' sugar, and orange zest. Cook until cool, stirring constantly. Stir in the remaining sour cream mixture and pour over chicken slices. Cover, and refrigerate for at least 2 hours.

Remove chicken pieces and chill the rest until serving.
