1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup corn syrup
1 teaspoon vanilla extract
3/4 teaspoon citrus zest
1 cube pumpkin puree
1/4 cup raisins
Preheat the oven to 275 degrees F (135 degrees C).
In a mixing bowl, cream together the butter, brown sugar, corn syrup, and vanilla. Mix in the lemon zest and pumpkin puree. Spread evenly on the prepared cookie sheet.
Bake for 1 hour in the preheated oven. Remove cookie sheet from oven. Cool completely before transferring to a wire rack to cool completely.
