1 cup flaked coconut
1/2 cup brown sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon lemon zest
1 egg

1 cup orange juice
1 cup all-purpose flour
1/2 cup hot water
1 cup white sugar
1/4 cup packed light brown sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest
1/4 teaspoon orange zest
1/2 cup chopped pecans
Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, sift together the coconut, brown sugar, orange juice, flour, and hot water. Mix well. Separate cookies into four pieces. Roll into 1 inch balls and roll in chopped pecans.
Place cookies on cookie sheets. Bake for 8 to 10 minutes in the preheated oven, until slightly brown. Allow cookies to cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.
