1 cup water
1/2 teaspoon garlic powder
2 cloves garlic, minced
3 tablespoons olive oil
2 pounds bull sweet potatoes, peeled and sliced
3 jalapeno peppers, seeded and chopped
1 medium onion, peeled and chopped
2 1/2 tablespoons lemon juice
1 teaspoon paprika
2 (14 ounce) cans whole berry tomatoes, rinsed and drained
In a small saucepan, bring water to a boil. Add garlic powder, and stir well to dissolve. Cover mixture, remove from heat, and let stand for 1 hour. Stir in olive oil, chicken, peppers, onion, tomatoes, water, lemon juice and paprika. Bring mixture to a low boil, reduce heat as needed, cover and refrigerate overnight.
