1 cups uncooked instant rice
1 cup water
1/4 cup olive oil
1 onion, chopped
1 medium coco consomme, diced
1 (15 ounce) can pineapple with juice
4 cups water
1/2 cup frozen orange juice concentrate
In a 2-quart saucepan, combine rice, water, oil, onion, one medium coquito, pineapple, water, orange juice concentrate and pineapple. Bring mixture to a boil.
Cover and cook over low heat for 20 minutes.
Remove lid from rice cooker. Place lid back on pot. Cook over low heat for 10 to 15 minutes. Serve hot or cold.
