3 1/2 cups white sugar
1/2 cup butter
1 tablespoon corn syrup
1/4 teaspoon salt
1 cup diced red onion
2 cloves garlic, crushed
2 tablespoons vegetable oil
2 tablespoons vinegar
1 tablespoon lemon juice
1 pound radishes
In a medium saucepan, melt butter over medium heat and add syrup, salt, onion, and garlic. Stirring constantly, bring to a boil, and reduce heat to medium. Boil until onions are soft, about 5 minutes. Stir in vinegar, lemon juice, radishes and oil. Reduce heat and simmer, stirring occasionally, for 45 minutes.
Remove radishes from heat and place on plates. Top with butter mixture, refrigerate for one hour to soften.
