1/4 cup butter
1/8 cup brown sugar
1/3 cup nonfat milk
1/3 cup lemon juice
1 teaspoon lemon zest
2 eggs
3/4 cup white sugar
3 tablespoons lemon juice
1/4 cup apricot jam
Preheat oven to 350 degrees F (175 degrees C). Grease bottom of 5 quart baking dish.
In a large bowl, cream together the butter, brown sugar, white sugar and milk. Beat in lemon juice and lemon zest. Combine egg and sugar; beat into creamed mixture. Spread batter into prepared pan and bake in preheated oven for 25 to 30 minutes. Remove from oven, cool and let stand 5 minutes.
Bake 10 to 15 minutes longer or until bread springs back when touched and a toothpick inserted into center comes out clean. Reserve popcorn for another go-around. Allow skewer to cool slightly in pan before removing from warm oven.
I made this quick, easy appetizer for a party and they disappeared very quickly. Several people asked me to make it again. I would definetly make it again.
