Corn Pudding Recipe

Ingredients

1 cup butter, softened

1 cup white sugar

1 egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup cornmeal

1/2 cup white sugar

1/2 teaspoon salt

1 egg

1/2 teaspoon vanilla extract

1 cup milk

1 tablespoon margarine, melted

2 egg yolks

1 tablespoon margarine, melted

1 cup chocolate chips

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 7x9 inch pan.

In a large bowl, cream together the butter or margarine, sugar, egg, and vanilla until smooth. Beat in the flour, baking powder, salt, and vanilla. Mix in the cornmeal, sugar, salt, egg, and vanilla. Stir in milk, margarine, egg yolks, sugar, salt, egg, and vanilla. Mix in chocolate chips.

Roll the mixture into 1 inch balls and roll them in margarine and melted chocolate. Place them in the prepared pan and bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Turn the balls over and bake for an additional 10 minutes. The pudding may come out a little brown. Serve hot from the oven or at room temperature.
