Apple Pudding I Recipe

Ingredients

1 cup butter, softened

1 cup all-purpose flour

2 eggs

1 teaspoon vanilla extract

2 cups white sugar

1 teaspoon vanilla extract

2 teaspoons baking soda

3/4 cup applesauce

3/4 cup raisins

1 (8 ounce) package cream cheese

2 cups white sugar

1 (3 ounce) can evaporated milk

Directions

Preheat oven to 350 degrees F (175 degrees C).

Butterfly 2 cups butter or margarine and brown sugar in small skillet. Remove from heat. Mix flour, eggs and vanilla extract into butter mixture. Mix cream cheese and sugar until smooth. Pour mixture into bottom and sides of 8-inch square baking dish. Place cornflakes around edges. Spoon 1/4 cup of applesauce over apples.

Bake 20 minutes in the preheated oven. Cool slightly. Cut into 1/4-inch squares; sprinkle cream cheese and sugar over cream cheese. Top with remaining fruit. Refrigerate at least 2 hours or overnight. Whisk egg mixture with 1/4 cup white sugar before serving.
