1/2 cup butter, melted
1/2 cup honey
1 teaspoon almond extract
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon baking powder
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 egg
1 teaspoon lemon zest
1 cup buttermilk
1 1/2 cups chopped apple
1 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together the butter or margarine, honey, almond extract and vanilla. Stir in the flour, baking soda, baking powder, baking powder and nutmeg. Mix together well. Mix in lemon zest, apple, walnuts and lemon zest and juice. Drop by teaspoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to wire racks to cool completely.
I usually only make one recipe per week, so I was a little embarrassed when I got in touch to tell me that there are over 200 cookies and cupcakes in the cupboard! That's quite a collection, and I didn't even include the brownie mix, so I've cut the cookies down to size. I didn't bake them, as I was concerned that the chocolate chip would have spoiled the delicious texture, and I've tested that it still tastes wonderful, albeit shrunken and bland.
