Stuffed Italian Beef Recipe

Ingredients

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

1 (8 ounce) can tomato sauce

1 quart beef broth

1 (10 ounce) can sliced mushrooms, drained

1 (10.5 ounce) can tomato-vegetable juice concentrate

1 (10 ounce) can Italian-style stewed tomatoes with liquid

1 tablespoon garlic powder

1/2 teaspoon dried basil

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a large pot, heat olive oil over medium heat. Saute onion and green pepper until transparent and tender.

Stir in tomato sauce, beef broth, mushrooms, tomato juice concentrate, tomato stewed tomatoes, Italian style stewed tomatoes, garlic powder, basil, AND parsley

Pour mixture over beef and vegetables in a 9x13 inch baking dish.

Bake in the preheated oven for 35 minutes, or until beef is browned. Top with mushrooms, tomato juice concentrate, tomato juice stewed tomatoes, Italian style stewed tomatoes, garlic powder, and parsley.
