1 cup white sugar
1/4 cup milk
1/8 teaspoon salt
2 eggs
1 cup butter, softened
1 teaspoon vanilla extract
1/4 teaspoon lemon zest
1 (16 ounce) can sliced peaches, drained
Preheat oven to 350 degrees F (175 degrees C).
In a medium mixing bowl, blend sugar, milk, salt, eggs and butter. Stir into the sugar mixture until just blended. Pour into a 9x13 inch baking dish. Place peaches in the dish, and sprinkle with the sugar mixture.
Bake in the preheated oven for 20 minutes, or until lightly browned. Remove from heat and sprinkle with lemon zest. Cool completely before slicing.
