2 1/2 cups lasagna noodles
2 1/2 cups torn carrots
2 1/2 cups sweet potatoes
1/2 cup mixed raisins
1/2 cup white sugar
1/2 pound butter, softened
2 cups dried minced onion
3 cups mozzarella cheese, warmed and crumbled
1 small onion, scraped and halved
salt and freshly ground black pepper to taste
1 (10.5 ounce) package saltine crackers
Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking dish with foil.
In a medium bowl, mix together lasagna noodles, carrots, potatoes, raisins, sugar and butter.
Pour half of mixture into prepared baking dish. Layer half of remaining mixture over noodles and press remaining on top. Spread cracker crumbs over heated noodle mixture. Place topped baked dish in the oven; bake until center is firm, about 1 hour. Uncover and let stand.
