6 tablespoons butter, divided
1 cup white sugar
4 (1 ounce) squares fresh strawberries, sliced
1 cup apricots
2 teaspoons lemon juice
2 tablespoons cornstarch
1 teaspoon lemon zest
1 (11 ounce) can sweet potato
1 (14 ounce) can whole kernel corn
Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9 inch pie plate with nonstick spray.
In a saucepan, combine butter, sugar, strawberries, apricots and lemon zest. Microwave for 2 minutes; stir. Placefuls of the apricots over ice in dish. Drizzle with lemon vegetable mixture, stir, and spoon over pie in pan. Pour remaining apricots on top of pie. Roast in preheated oven for 30 minutes. After 30 minutes of baking, remove pan from oven. Allow mixture to cool slightly, so that it remains liquid. Spread warm apricot spread on pie. Spread apricot creme de lemon on top of pie. Chill overnight in fridge.
While mixture is chilling, whip egg whites with lemon juice and cornstarch. Notes:
Pour jam into a small mason jar (or glass jar) and add 1 to 3 tablespoons lemon zest.Place lemon cream filling in center of an open pie crust and seal edges tightly with toothpicks. Place lemon cream filling in triangles on both sides (eg NO TIES).
