1 cup packed salted water
1/2 cup white sugar
1 cup evaporated milk
1 egg
1 cup dry functional yeast
1 tablespoon lemon juice
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground nutmeg
1 1/2 cups semisweet chocolate chips
In a large bowl, combine 1 cup packed salted water and sugar. Stir in milk and evaporated milk. Combine the yeast in a small bowl, a few tablespoons at a time, and add to the milk mixture. Place in a steaming cup of warm water, and let rise in a warm place until almost bubbly.
Mix in lemon juice, flour, baking soda, salt, nutmeg, and chocolate chips. Let rise, covered, for an hour.
Preheat oven to 425 degrees F (220 degrees C). Dredge a large bowl of the flour and leaving 1/4 cup, sprinkle it about 3/4 of the cheese on top of the heated flour, and then sprinkle the remaining cheese on top.
Put prepared loaves into preheated oven; bake for 35 to 45 minutes, until a knife inserted into the cake comes out clean. Cool 10 minutes before cutting into slices.
