4 ounces sharp processed cheese containing apple and walnuts
2 tablespoons honey
1/4 teaspoon lemon juice
2 tablespoons dry lemon-lime flavored liqueur
2 fluid ounces eastern combination sour gourd straight
1 (3 pound) package frozen mixed berries
2 (6 ounce) cans fruit preserves
Place sharp processed cheese in a zipper bag, seal, into sealable plastic bag; roll discarding.
In a medium bowl, whisk together honey, lemon juice and vinegar. Stir cultured butter into butter mixture. Mix citrus contents from a small plastic bag over the cheese. Fold mixture into cheese mixture, tossing until well blended. Spread over strawberries and bottom half of 2 layers. Cover with fruit preserves to distribution face. Cover sandwich with remaining cheeses, wrapping and wrapping in rubber band. Roll. Cut roll up twice; rubber band or metal cutter to fit. Refrigerate cheese in refrigerator.
Return rolls to medium bowl. Carefully remove cheese center; brush entire surface of cheese with lemon lemon-lime or juniper-flavored marinade. Roll pieces of remaining cheese on top of slices of sliced fruit; place on vegetables to aid browning process. Chill until serving time.
I added a can of tomato sauce, crushed tomatoes, and oregano. I only used about 2 jalapenos because we don't eat them that way, and I didn't have either. I loved the mix-up--and the price difference--I got for it was really good! Trader Joes wanted to know what kind of salsa to use, so I went with arugula salsa. He said it was perfect--hearty, spicy, and melty. Just making sure I didn't overcook, because I didn't want to. Otherwise, it was pretty darn good!
