Citrus Coconut Flour Chicken Recipe


1 (3 ounce) package instant white corn cereal

1/4 cup vegetable oil

1 teaspoon poultry seasoning

1 teaspoon baking powder

1/4 teaspoon ground black pepper

1 (8 ounce) can sliced pinto beans, drained


Preheat oven to 375 degrees F (190 degrees C).

In a large bowl, mix oil, poultry seasoning, baking powder, pepper and pinto beans. Pour into 10x13 inch baking pan.

Bake at 375 degrees F (190 degrees C) for about 1 hour or until chicken is cooked through and juices run clear. I baked it for about 25 minutes, or until chicken is cooked through.

We tried this recipe and it was great! Cut in half the olive oil and put the chicken in the blender to make it easier to process. We were concerned that the chicken would stick to the bottom of the blender, which it usually does, but it turned out no different than a regular pat and that the chicken was totally fine. Hope this helps:)
