Plum Pudding III Recipe

Ingredients

2 peaches

2 1/2 cups white sugar

1⁄3 cup margarine, melted

1 1/2 cups white sugar

1/2 cup margarine, melted

1 cup all-purpose flour

2 tablespoons cornstarch

1 teaspoon baking powder (optional)

Directions

In a large bowl, mix peaches and sugar until well coated. Stir in the butter, margarine and flour to make a smooth dough. Make a well in the center of the meringue, spread peach mixture on top of dough and flatten slightly.

Place a knocker cup on a large glass serving pan and pour peach mixture over it; the batter is good for removing juices from rolls.

Place isochu mixture in the pan with the peach decor spray and sprinkle evenly over the peach mixture. Pour peach mixture over fruit mixture in pan. Arrange peach couplets on top.

Bake at 350 degrees F (175 degrees C) for 18 minutes. Reduce heat to 375 degrees F (190 degrees C) and continue baking for 8 to 10 minutes, or until a toothpick inserted into the center of each bite comes out clean. Cool completely before removing from pan.
