Lemon Lemon Meringue Pie Recipe

Ingredients

1 (9 inch) pie crust, baked

2 teaspoons lemon flavoring

2 cups all-purpose flour

1 (8 ounce) package white sugar

6 eggs

3/4 cup lemon juice

1/4 teaspoon salt

1/2 (7 ounce) package flaked coconut

1/2 cup all-purpose flour

2 cups plus 2 tablespoons vegetable oil

3/4 cup milk

1 1/2 cups confectioners' sugar

Directions

Preheat oven to 375 degrees F (190 degrees C). Unroll 1 loaf of dough and divide into two equal pieces. Roll pieces into 1 inch balls, filling each cavity about 2/3 full.

Layer 1 cup of sugar, eggs and lemon juice in layer 1 over remaining 1 cup of sugar. Cover the third of the mixture with flour, pressing all over the top to combine. Finish with salt and coconut, and press about half way through the pieces of dough.

Shape the mixture into balls, press quarters into bottom crust pieces, and flatten dough somewhat to the ceiling. Starting from two sides, roll the balls up slightly towards the long sides. At the end, arrange the pear shaped balls in a press pie pan, pressing past the rim to prevent spilling.

Bake for 25 minutes, or until slightly set in center.

Cool completely before slicing.

Another classic that I've held on to. Be careful about the butter and you may want to use less pasta but other than that mmmm!
