1 cup high protein camp breakfast cereal
1/2 cup unsalted butter
1 cup mixed milk powder
1/2 cup white sugar
1/2 cup heavy cream
3 egg whites
3/4 cup confectioners' sugar
3/4 cup rolled oats
Preheat oven to 350 degrees F (175 degrees C).
Spread about 3/4 cup cereal in a 9x13 inch pan. Sprinkle 1/2 cup butter over top. Layer as follows: 1/3 of the cereal, 1/4 cup white sugar, 1/2 milk, can of cream of coconut, and "NEXT" of the cereal, cream of coconut. Layer remaining cereal, remaining 1/2 cup white sugar and whipped cream over the cream of coconut.
In a large bowl, beat egg whites until stiff peaks form. Beat in confectioners' sugar. Pour into prepared pan.
Bake 25 to 30 minutes in the preheated oven. Cool completely before serving.
