Spinach Soup IV Recipe

Ingredients

1 (15 ounce) can sliced mushrooms, drained

3 large tomatoes, chopped

2 large onions, chopped

1 (14.5 ounce) can sliced mushrooms

8 large carrots, grated

1 (10.75 ounce) can condensed tomato soup

7 cups water

1 teaspoon white sugar

1/4 cup chopped fresh basil

1/2 teaspoon dried rosemary

1/2 teaspoon dried thyme

1 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon dried oregano

1 (12 ounce) package frozen minced spinach, thawed

2 tablespoons olive oil

4 tablespoons canned tomato paste

4 tablespoons orange juice

1 package frozen mixed vegetables, thawed

4 pounds diced chicken

1 tablespoon chopped fresh parsley

Directions

In a large pot, combine mushrooms, tomatoes, onions, mushrooms, carrots, tomatoes, onion, mushrooms, carrots, tomatoes, salt, pepper, oregano, crushed tomatoes, basil, rosemary and thyme.

Bring to a boil. Reduce heat and simmer over medium heat 1 hour. Stir in spinach.

Stir in water and sugar. Cook 4 hours, stirring constantly, until spinach is tender (see Note on Cook Time). Stir in salt, pepper, oregano, basil, rosemary, lemon juice, garlic powder, pepper, oregano... Cook 10 minutes, stirring occasionally, until spinach is wilted. Spoon tomato mixture over pasta, cover and simmer gently for 10 minutes.

Remove foil from pot. Coat pan with olive oil. Sprinkle mushrooms over pot. Arrange mushrooms in pot; cook 5 minutes. Stir in basil, rosemary, lemon juice, garlic powder, pepper and oregano. Place chicken on top of mushrooms, and remove foil. Place chicken over mushrooms in pot. Sprinkle chicken with basil and add more olive oil if necessary. Pour 1/2 cup tomato sauce over chicken.

Cover pot over low heat. Simmer heat for 1 to 2 hours, stirring occasionally. Reduce heat to medium.

To make the tomato sauce: In a small saucepan, melt butter or margarine, stirring occasionally until very smooth. Stir in 1/2 cup chopped onions. Stir in 1/2 cup chopped celery. Mix in 1/4 cup chopped onion. Mix in 2 cups minced mushrooms, 2 tablespoons chopped celery and 2 tablespoons chopped carrot. Mix in 1 teaspoon chopped mushroom. Stir in 1 teaspoon chopped red bell pepper. Stir in 1/2 teaspoon chopped green bell pepper.

Pour tomato sauce over chicken and serve immediately.
