1 cup sour cream
1 cup chopped green bell pepper
1 cup carrots, diced
1 cup packed light brown sugar
2 tablespoons optional salt
1 egg, separated
3 tablespoons light olive oil
1/2 cup packed fresh lemon juice
1/4 cup chopped fresh parsley (optional)
1 (12 ounce) package frozen mixed vegetables, thawed
1 (15 ounce) can tomato paste
1 1/2 tablespoons vegetable oil
1 (16 ounce) package shredded Cheddar cheese
In a small bowl, mix the sour cream, green pepper, carrots, brown sugar, salt and egg. To the mixture add the olive oil, lemon juice, parsley, mixed vegetables, tomato paste and olive oil. Mix well. Chill mixture until serving.
