1 (18 ounce) can sliced pineapple
1 teaspoon white sugar
1/4 cup brown sugar
2 cups evaporated milk
2 tablespoons lemon juice
1/2 teaspoon lemon zest
5 apples
2 tablespoons white sugar
1 tablespoon orange juice
Place pineapple in shallow dish and pour 1/4 cup brown sugar onto pineapple. Place pineapple in freezer bag, place on back of aluminum foil and refrigerate 2 hours (note: refrigerate pineapple if using frozen).
Stir brown sugar into pineapple mixture and mix well. Cook over medium heat, stirring constantly, until mixture is thickened and smooth. Remove from freezer bag and stir pineapple into pineapple mixture, whisking until combined. Place sliced pineapple on plate and spoon lemon juice over pineapple.
