1/2 cup butter
1 cup packed brown sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
3 eggs
1 1/2 cups all-purpose flour
3/4 cup white sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 1/2 cups butter, softened
1 (18 ounce) can sliced pecans
Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a cookie sheet.
In a large bowl, cream together the butter, brown sugar, vanilla, salt, eggs and flour until smooth. Beat in the sugar, egg and vanilla extract. Mix in the flour mixture.
In a large bowl, beat 3/4 cup of the butter mixture into 3/4 cup of the pecans.
Roll the dough into 1 inch balls and roll the balls in remaining butter mixture. Roll the balls in pecans. Place cookies 2 inches apart onto the prepared cookie sheet.
Bake for 25 minutes in the preheated oven. Cool cookies on wire rack. Store cookies in airtight containers for up to 3 days.
