6 slices bacon
6 slices Swiss cheese
2 eggs, beaten
3/4 cup milk
1 (8 ounce) package cream cheese, softened
1 (4 ounce) can lemon-lime flavored Jell-O mix
1 (8 ounce) can sliced mushrooms, drained
6 slices sliced spinach
3/4 cup shredded Swiss cheese
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups or paper muffin liners.
Prepare the quiche by placing bacon in a large skillet. Cook over medium high heat until evenly brown on both sides of bacon. Drain bacon grease and drain grease from pan. Place bacon grease back into pan.
In a medium bowl, mix bacon grease, cream cheese, lemon-lime flavored gelatin, meat mixture, eggs, milk and lemon-lime gelatin. Stir well. Spoon mixture into prepared muffin cups. Sprinkle with sliced mushrooms, spinach and Swiss cheese.
Bake in preheated oven for 10 minutes at a time. Serve perfectly.
