1 egg
1 cup white sugar
1 teaspoon vanilla extract
2 1/2 cups milk
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 cup all-purpose flour
2 tablespoons butter, melted
2 teaspoons ground nutmeg
2 teaspoons ground cloves
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Line bottom of 10 slices pan with a piece of waxed paper. Place 1 apple in each of two greased 3/4 cup muffin cups. Sprinkle with sugar, then sprinkle with vanilla extract.
Bake in preheated oven for 8 minutes, or until apples are tender. Reserve remaining cooking time. Let cool and cut into squares.
In a large bowl, cream together the butter, brown sugar, flour, baking soda, salt, cinnamon, flour, and butter until smooth. Mix in the egg and sugar mixture. Beat the brown sugar mixture into the creamed mixture alternately with the milk. Fill muffin cups three at a time with the apple mixture.
Bake in preheated oven for 10 to 11 minutes, until apples are tender. Remove muffins from oven and sprinkle with remaining 1/2 cup sugar. Top each muffin with 1/2 cup of apple mixture. Place one cinnamon note on each muffin.
