1/2 cup margarine
1/2 teaspoon white sugar
2 teaspoons ground nutmeg
1 teaspoon dried thyme
2 1/2 cups sliced fresh plums
3 eggs
3 tablespoons honey or orange zest
1/2 cup margarine, melted
1/3 cup packed light brown sugar for decoration
Preheat oven to 350 degrees F (175 degrees C).
In a small mixing bowl, mix together margarine, sugar and nutmeg. Sprinkle about 1 tablespoon plum mixture onto each half of a pie, leaving about an inch wide on each side. Arrange plums on bottom half of pie. Spread egg and honey over plums.
Place pie slices onto a cookie sheet. Brush with margarine or margarine, alternating with ball of egg mixture. Cover pie sides with foil until all plums are coated.
Bake 10 to 12 minutes in the preheated oven, until lightly browned. Remove foil twice, and bake 15 to 18 minutes more, until crust is golden brown. Cool before serving.
