2 3/4 cups all-purpose flour
1 1/4 teaspoons baking powder
6 teaspoons pure maple syrup
1 teaspoon optional sweetener
1 1/2 teaspoons rum flavored extract
1 teaspoon cinnamon, if desired
Preheat oven to 350 degrees F (175 degrees C).
To Make Crust: In a large bowl, stir together 2 3/4 cups flour, baking powder, maple syrup and sweetener. Stir until well blended. Mix in cinnamon extract; refrigerate dough until firm enough to handle.
Heat oven to 350 degrees F (175 degrees C).
To Make Sides: Roll pastry onto 12 or 13 squares, or serve as two plates if using cinnamon rollers. Cut twice along the edges to form dips; set aside.
To Make Filling: In a large mixing bowl, beat 2 teaspoons rum flavored extract with 4 tablespoons sugar, 1 teaspoon cinnamon and 2 tablespoons flour until fluffy. Spread mixture into crust.
Bake in preheated oven for 20 to 25 minutes, or until fluffy with toothpicks. Let cool before cutting into strips.
