1 1/2 cups diced red onion
1 (3 ounce) can canned Italian-style diced tomatoes
1 (6 ounce) can Italian-style diced diced mozzarella cheese
4 eggs
1 cup vegetable oil
1 cup chicken broth
2 cups shredded Cheddar cheese
Preheat oven to 425 degrees F.
In a medium bowl, mix onion, tomatoes, mozzarella cheese and eggs. Mix well. Transfer mixture to the prepared baking dish.
Bake at 425 degrees F for 15 to 20 minutes, or until the franks are bubbly and the crust is golden brown. Top with chicken from the left side; do not drain.
