1/2 cup butter
1/2 cup packed brown sugar
1/2 cup white sugar
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
Preheat oven to 325 degrees F (165 degrees C).
Crumble the brown sugar into a large bowl, or as desired, pour in the white sugar and brown sugar mixture. Mix until well blended. Stir in the lemon zest. Place brown sugar mixture in a medium bowl. Stir in the butter, lemon zest and vanilla until well blended. Drop by rounded spoonfuls onto ungreased cookie sheets.
Bake for 8 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
