Baked Mushroom and Salad Recipe

Ingredients

1 (10 ounce) package organic shredded mozzarella cheese, divided

2 tablespoons basil

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1 medium onion, diced

1 medium yellow bell pepper, diced

1 medium green bell pepper, diced

3 cloves garlic, minced

3 tablespoons Italian seasoning

2 tablespoons white vinegar

1/2 teaspoon salt

1 dash black pepper

2 tablespoons vinegar

1 tablespoon olive oil

2 tablespoons minced fresh parsley

Directions

In a medium bowl, mix the cheese 1/2 tablespoon basil, lemon juice, olive oil, onion, bell pepper and garlic.

Line a large baking sheet with aluminum foil. Rub the cheese mixture into the foil, using a fork or spoon to do so. Lay a sheet of foil on the prepared baking sheet to keep warm.

Bake in preheated oven for 50 minutes, or until bubbly. Discard foil.

Meanwhile, in a large bowl, combine the garlic, Italian seasoning, vinegar, salt, black pepper, vinegar, olive oil, parsley and pepper. Mix well and serve warm.
