Potato Salad I Recipe

Ingredients

2 pounds potatoes, pierced and cut lengthwise into 1/10 inch slices

1/2 teaspoon salt

1/4 teaspoon ground black pepper

2 teaspoons butter

4 cups shredded Cheddar cheese

1 (10 ounce) package frozen chopped carrots, thawed, thawed, and sliced thin

Directions

Preheat oven to 350 degrees F (175 degrees C).

Lay out a large unwrapped sheet of foil or parchment paper in a 9x13 inch baking pan. Spread fries on sheet, and sprinkle salt on the top. Place potatoes on sheet, and broil 5 minutes, or until tender.

Spread sliced potatoes evenly on greased baking sheet; turn once and remove foil. Bake 20 minutes, turning once, until no longer pink and golden brown.

Meanwhile, preheat oven broiler.

Cut carrots in half, leaving large, crisp. Place 2 inches apart on baking sheet. Broil 5 minutes. Turn, cut and serve.
