Cathedral Royal Cake Recipe

Ingredients

1 (18.25 ounce) package yellow cake mix

1 (3 ounce) package instant vanilla pudding mix

4 cups confectioners' sugar

4 eggs

2 cups margarine

1 cup all-purpose flour

1 teaspoon baking powder

1 1/2 teaspoons baking soda

1 (17 ounce) can cream cheese, diced

1/2 cup milk

1 cup butter

2 teaspoons vanilla extract

4 tablespoons confectioners' sugar for decoration

1/2 cup finely chopped almonds

1/4 cup ricotta cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9-inch round cake pans.

In a large bowl, mix together cake mix and instant pudding mix. In a separate small bowl, mix together vanilla pudding mix and butter. Combine flour, baking powder, baking soda, and cream cheese; stir into cake mix batter. Fold in the milk. Spread evenly into the prepared pans.

Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely, and frost with confectioners' sugar.
