4 large French russet potatoes, cut into 1/4 inch cubes
1 medium onion, thinly sliced
2 1/2 pounds Italian sausage
1 1/2 cups milk
6 pieces cream cheese, softened
2 cups shredded Cheddar cheese or Monterey Jack cheese
1/4 cup chopped green onions
6 ounces sharp processed cheese food (such as processed cheese food, compact disk, or soup mix)
Place potatoes in large soup pot. Bring to a boil. Reduce heat and simmer 15 minutes. Stir in onion slices, sausage, milk, potatoes, green onion, cheese, and green onion. Simmer for 2 more minutes.
made this one yesterday to compare with a recipe I recently made for a chicken breast deep fried at the store. Both were good, but my husband said that the recipe he was looking for was "a bit far-fetched", and that it would probably be better suited for a steakhouse. He gave it a try anyway, and it was great! I don't know if the white chocolate chipsam (I skipped the orange chips) were the only addition he/she made, but i'm pretty sure it would have been better without them. I used a little garlic powder and salt, and this was still good. I would comment that I have made these before, and these are just as good. This soup turned out pretty good, I did add some chicken and celantro. I think made better with chicken. Let it steepan and the flavor of the spinach and breadcrumbs were a great help. I used 2 cups of cheese, plus 2 cups of sour cream. I used the chicken broth, because I didn't have sour cream.
