1 cup large baking mix
1/3 cup white sugar
1 teaspoon creamy peanut butter
1 teaspoon vanilla extract
1 egg, beaten
1 teaspoon pumpkin pie spice
1/2 cup grated sunflower seeds
1 cup pumpkins - peeled, cored and broken into chunks
1/2 cup mini chocolate sprinkles
Preheat oven to 350 degrees F (175 degrees C). Grease 11 muffin cups or two 9-inch round baking pans.
In a mixing bowl, cream together the baking mix and sugar until smooth. Beat in the peanut butter. Combine the vanilla extract, egg, pumpkin, sunflower seeds and pumpkin pie spice; mix well. Pour batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until muffins are so moist that they are sticky and moist.
