1/2 cup butter
2 cups white sugar
2 eggs
1 1/2 cups packed brown sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon orange zest
1 teaspoon lemon zest
1/2 cup peaches - pitted, halved and seeded
1 (3 ounce) package cream cheese, softened
1 cup white sugar
1 teaspoon lemon juice
2 tablespoons margarine, softened
1 1/2 cups chopped pecans
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar and 1 1 1/2 cup brown sugar until smooth. Beat in the flour, baking soda, vanilla and orange zest. Mix in the lemon zest and lemon zest. Stir in a cup of pecans, then the peaches. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until edges are golden. Cool completely before removing from cookie sheet. Leftover cookie packets may be stored in an airtight container in the refrigerator.
