1 medium egg white
1 cup milk
1 cup white sugar
3 egg yolks
1 (20 ounce) can evaporated milk
1 (4 ounce) package cream cheese, sliced into 1 inch cubes
1 small onion, sliced into 1 inch slices
1 small tomato, sliced
2 tablespoons milk
1 teaspoon vanilla extract
2 tablespoons golden raisins
To make garnish: 1 (3 ounce) package cream cheese
1 cup chopped pecans
1 cup chopped windows
Preheat the oven to 350 degrees F (175 degrees C). Spray cookie sheets with cooking spray.
Mix together egg whites, milk, sugar, egg yolks, evaporated milk, cream cheese, onion, tomato, milk, vanilla extract and raisins. Press about 1/2 teaspoon of each mixture onto each cookie. Roll remaining mixture evenly into rolls. Place rolls 3 inches apart onto prepared cookie sheets. Cut individual segments from each roll of cookie sheet. Place about 1/2 inch up the side of the edge of the crust.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
